Mediterranean style red snapper
Ingredients required :
1/2 tbsp Pepper 2 tbsp Olive Oil 1 tbsp crushed Garlic
Red bird’s eye chillies/chilli flakes
4-5 Garlic cloves
Herbs as per choice – basil/thyme/rosemary/kafir lime
1. Wash the red snapper fillets with the skin on and pat dry gently. 2. Grate the lemon gently to make about a quarter spoon lemon zest, grate/crush garlic as well
3. Marinate the fillets in all the ingredients for about 30 mins
4. Heat olive oil in a no-stick pan and cook the fish 7-8 mins on each side or till the skin is crispy.
Alternatively bake it in foil for 30 mins on 180 degrees Celsius.
5. Serve with lemon wedges and fresh herbs on top, roasted veggies on the side.
